A dry, sparkling cider made from 100% Belle De Boskoop apples. Belle is a dutch apple traditionally used for baking that Eden gets from their growing partners at Scott Farm in Southern Vermont. Slow cold fermentation, then aged 10 months in used French Oak puncheons before being bottle-conditioned. A bright, lively, and deeply textured cider with moderate acidity. Notes of orange, lemon, biscuit, and hay.
